With there being no glastonbury, I was forced to try and make my own Happy Maki vegetarian sushi wrap thing- it was actually a lot easier than I anticipated and was a delicious success!

Also had some luck with that No Bones Jones Cookbook, so the food loss is not as great as it could have been

I'm trying the happy maki with some vegan hoisin 'duck' at home. Need my extra wasabi with a fresh orange mango ginger smoothie to restart the senses after a heavy night 😆

Smoothies save my life at Glastonbury ... perhaps not but it feels like it :)

Do people making their own Happy Maki use a sushi prep kit and just keep them big rather than cutting into little sushi?

I've never made my own sushi before or had Happy Maki but it was on my list for this year! Last time I was in Brighton they were shut!!

Nothing like any Glastonbury food I've ever had but I did make brioche loaf eggy bread with raspeberries, maple syrup and whipped cream for breakfast. The brioche loaf was on offer last night when I went to the shops. I am intending to make nachos, some form of mezze, a paneer tikka wrap and mac and cheese this week.

Ack! That must have been devastating!

To make it, start by going to their website to get an idea of which wrap you want to re-create, and get the ingredient listed:

I normally go for: avocado, red pepper, cucumber, some sort of tofu/fake duck or fake chicken, sweet potato.

I get this Yutaka sushi rice (Yutaka also do a very nice Katsu curry if you want to re-create Wagamama's vegetarian Katsu curry dish, plus the sushi rice is the same as their sticky rice that it's served with) :

I get their Nori too (some Nori is difficult to tear with your teeth when your eating it, but this one is fine)

I also get their ginger pickle for it too:

and some sesame seeds and some Soy sauce

Finally, this is the rice vinegar stuff (it saves you having to add sugar and faff about with normal rice vinegar):

All instructions on how to cook the rice are on the rice packet, and then adding the vinegar instructions are on the vinegar bottle. For the rest, follow this video:

I cut it in half, but don't bother cutting it any more than that. Once you've done it once it's a lot less faffy than it looks!

If i lived closer I definitely would!! As it is my husband and the dogs helped me polish it off. 

It was very easy to make though and the brioche loaf was reduced to 19p!! Bargain!!
