Uuuummmm .... pizza! I've brought beans, a can opener, butter and some squidgy white bread.

I've started to go vegetarian five days a week (and have meat as a treat for the weekends) - does anyone have some great, easy ideas for bulky feeling vegetarian food?

Butternut, chickpea and kale one pot is easy enough. Sautee and onion and maybe some garlic until its translucent. Chop a butternut squash - add to pan,add 2-3 cans of chickpeas pour 1.5 litres of stock over (approx) and simmer covered for around15 mins

Add a cup of red lentils, a couple of tomatoes deseeded, 2 tablespoons of tomato puree, 2 teaspoons of oregano (dried or fresh) and a teaspoon of ground coriander and simmer , lid off for around 20 mins - or until lentils are cooked and squash is falling apart

Add a couple of handfuls of kale and simmer for 5 mins to soften. If its not reduced enough boil it down for another 10 minutes

Makes loads of bowls - freezes well - not expensive to make and darn filling. I made a batch middle of last week and only finished it off today ... does well for lunches or dinners
