End of the day its a bank holiday so they wont really be doing anything till tuesday, makes no odds to them they still wouldnt have done anything with it between 8-10th and ensures that those who genuinely forgot can still pay and they know those who havent paid genuinely dont want to go or arent able to do so

if the deadline wasnt going into a bank hol i expect it would be a much harder deadline for payment

Zero. 

It knows which of us have already purchased and tells us so. If someone wanted to scam they wouldn't do either of those.

I've estimated £60 for Car park and £9.95 for postage this year

There's also 7 of us so trying to split the cost of two orders across everyone without any "but that's not fairrrr" from people far too old to be so tight

Pretty sure can each pay their ticket off themselves, no need to collect money from them.

It was to save on postage 🙂  Each ticket gets charged £8-£10 for postage if paid off separately.
