The hand held aloft with an imaginary bird puppet? That's so groups of people following each other through a crowd can see each other.

It's so people can follow a group and see their friends through a crowd.

I (like others) am an evil bastard though so when I see someone else do it I tend to start doing it too to lead them astray

It may be something to do with The King of the Lobsters act on the Summer stage in Bella's field. The stage with deckchairs. He did that and got the audience doing it

If there is a clip of the King of the Lobsters act you may have an explanation. A man singing and doing that very hand gesture as a sort of trademark. He was performing a number of times and seemed to have a bit of a following.
