This will be our first time at WV, slightly concerned that a 2 man scout is smaller than our regular Vango 3 man with living area. How far of a walk is it from WV car park to WV camp? If it's close then no need to take everything with us on day 1, meaning less space shouldn't be too much of a problem.

I believe that's exactly what many do, just leave surplus in the motor

Stayed in a WV 2 man scout tent in 2015, was much bigger than your usual 2 man tent (which never really has room for 2 + stuff of course). Not got a proper "living area" but a porch with room to store shoes etc. and yep, a spacious inside for 2. But as others have said, car is very nearby if you do also want to leave stuff there.

Take a spare piece of groundsheet for the porch, good for storing as you say boots, cooker, etc.  also stops mud getting into the sleeping area .  Having the car close by is areal bonus
