The humidity of the surrounding air will also influence evaporation rate. The "drier" the air, the more thirst it has for water vapour.

Levels of wind also affect evaporation rate.

It's not purely down to temps.

I didn't say it was. But temperatures absolutely, 100% are the biggest influence.
