I'd recommend starting at the beginning with Closing Time. It's his most accessible album full of beautiful songs that show off his voice. Then jump forward to Rain Dogs for the best of his 80s weirdness. That beautiful voice evolved into the signature Waits growl as Keith Richards blusey guitar(more often Marc Ribot's guitar) competes with a deranged klezmer band. Decide which of those you like best if it's Closing Time then concentrate on his earlier stuff pre-Swordfishtrombones with Alice possibly of interest out of the later stuff as it's pretty ballad heavy if it's Rain Dogs then focus on everything since Swordfishtrombones.
