Edam in its skin keeps fairly well.
If you've got a washing up bowl of water and a tea towel you can use it as a cooler. Put what you want to keep cool in the bowl of water and drape the tea towel over so that it stays in contact with the water. The water then evaporates which cools the bowl down.
Alternatively for advice try this

Cheese sandwiches, made correctly with butter and freshly baked bread can be the food of the Gods. However most are shit. I was once given a cheese sandwich made with a slice of Tesco processed cheese. I left the party in disgust
